I’m feeling like 115 + 210 cabs are maybe the better 8ohm cab combo compare to a double 112. So I might want to start with a nice defined 115, from one of the lighter options like Genzler BassArray, Mesa subway Ultralight, or GR Bass.

On paper, I’d imagine the Genzler would probably the most defined, seeing as it’s a 15 with 4 smaller drivers to handle the higher frequencies. But I’ve also heard good things about the Mesa 115 like from Ivan Carranzas video on it. And of course the lightest option would be the GR Bass 115
I’m looking for a more defined cab, not exactly older school flavored like an Aguilar or Ashdown.

anyone got any experience with one or more of the three cabs I first mentioned?

I don't think you can make any general rule about how a cab will sound depending the size of its driver(s), it is no longer true — if it ever was. I don't know the other brands, but my Barefaced 1x12 and GR Bass 2x10 are both lightweight, width deep lows, and sound very defined and articulate. But I've seen demos of Mesa and Genzler that sound great too.

But again, there"s no relation between the size of the drivers and the tone. A 12 inch cab can sound very deep and detailed, you really don't need to mix different cab sizes to get full range frequency response.
