Ok, so I've got a JB with the two J's wired in series and a hidden guitar humbucker under the pickguard. What I want to do is wire them with an old style LP 3-way switch to select either the two J's, the humbucker or all three, but, since the mid position would be parallel, I also want to be able to have a switch to select all three (well, two, technically, since the two J's act as a single pickup) in series.

Can it be done with a DPDT on/on switch, the old LP style 3-way and a master volume?

I don't understand what you want for the all three position. Do you want the series J pickups in parallel with the humbuckers? If so, you don't need another switch.

Wire the ground of one jazz to ground. Wire the hot from that pickup to the ground of the other. Wire the other jazz hot to one side of the LP selector switch.

Wire the ground of the humbucker to ground. Wire the hot of the humbucker to the other half of the LP selector.

Wire the common of the LP to your output.

Up position: Jazz pickups in series.
Down position: Humbucker
Mid position: Jazz pickup in series in parallel with the humbucker.

I really like the 5 way rotary switches like PRS uses if you want something more complicated.

What you're describing is what I'd get with just the 3p LP switch, correct. What I want to do, is to also have the option of having the two J's and the humbucker in series. A master series/parallel switch, if you will. Hence the extra DPDT switch. Can this be done with the center-off DPDT I've got?

Here is what you are looking for though:
Series Parallel Master Switch
When you flip the switch to the series position, the LP switch won't do anything. So to switch from series to only one pickup you will have to flip two switches potentially. That is the only downside.

You could also consider a 4 position, 3 pole rotary switch to replace the LP switch.

Thanks guys, I just couldn't wrap my head around the whole 3way idea so I just went ahead and did the series-wiring swith with an on/off/on DPDT I'd got and two volumes. Basically, a typical JB with a series/parallel switch. It works well enough.
