Double Bass From student to pro upright (5/8), bow size help?

Why are you looking at Carbon Fibre bows? I think you'll find if you have pro ambitions that a CF bow will not do the job in terms of either tone or response. I have a nice Col Legno CF bow which I use mainly for outdoor gigs or for pieces where there's a lot of col legno playing (amazingly enough...). For everything else I use either my Andrew McGill bow (definitely no. 1) or my H.R. Pfretschner. In terms of length, all three are within 5mm overall, the CF bow and the McGill are 695mm overall (including button) and the Pfreschner is just under 700mm. They are all on the short side compared to what others in my section use, but it causes me no issues at all. Use what works, there are no rules.
 
I have used heavy 4/4 bows on 1/4 basses, never had any problem with choking the bass.
For an expensive pro bow, get a wooden bow made by a good bow maker.
For anything below € 1000.-, that are factory made bows. Usually the carbon fibre bows are better then equally expensive wooden bows in that price range.

It's about matching the bow to your instrument
 
I'm not sure I want to get in the middle of this, but... I've played 5/8th basses almost exclusively for the past 5 years (following surgery) and I have used bows by Prochownik, Guasti & Bottoni, Kolstein, Tom Owen and Burdell Tenney, as well as Arcus and Glasser carbon fiber bows, with weights ranging from 118 gr to 154 gr and the basses, while responding differently to each bow's characteristics etc, all seemed to respond well, no matter what the weight. Apart from Jargar Dolces at concert pitch, I tend to use synthetic strings, like Dominants, if that's a factor.
