An old keys player I worked with had a PC setup and it was always crashing. Reboot during a gig sucks and I do not recommend.
This is obviously anecdotal and could be an outlier, but specially designed hardware hasn't failed me or anyone I've played with unless it was at the end of its lifespan, and even then it gave me some warning with little glitches first.

If you do go PC route, it's definitely a substantial investment to get the right machine, interface, and software- and you need to also invest the time to know the right settings, and how far you can push it before failure. Just like a quality bass amplifier, same thing- imagine showing up to an outdoor gig with no pa support and the back line is a 1x10 50 watt combo. It's destined to fail.
