First introduced in Rochester, NY at a place called Nick Tahoe Hots. The "Garbage Plate" is two hots (or, now, two burgers) over a bed of mac salad and home fries, smothered in meat (Greek style) hot sauce, onions, and whatever other condiments one desires. They are so popular in this area that most diner type places, pizza shops, etc. have their own versions.

I'll see your Garbage Plate and raise you a White Hot..... another Rochester original.

We stayed home and inside today so i made a pot of snow day comfort food. I start with about 5 pounds of pork loin and trim all the silver skin and most of the fat. Wifey wants baked slabs tomorrow so i cut a few nice slabs off the big end after triming, cut the remainder into small bitesize pieces. Mix flour, onion powder, garlic powder, salt, black pepper, smoked paprika and a dash of cayenne in a gallon ziplock bag. Drop in the pork cubes and shake to coat. A little peanut oil in a skillet then drop a pan full and brown it up pretty good. Once you get that all done. I make up a couple cups of brown gravy, put it in a pot and add a white onion peeled and cut into about 6 slices, a couple big carrots cut into rounds, and the pork, bring it up to a good bubble and stir it until you get some good heat through and through then cut it back to a slow simmer, cover it and let it go for a half hour or so. Stir in some cubed potatoes and let it simmer until the spuds are tender. If it’s a little thin a couple spoons of potato flakes will tighten it up. We had ours in sourdough bowls, but it’s also good served over a big slice of dry toasted sourdough. If you omit the spuds it good over rice or noodles.

I have to agree. A taco with good ingredients and a freshly made tortilla is delightful, but meat on a stick is something special.

Completely. I mean, I wouldn't turn down taco night, even the sketchy ones can be delt with but I've had Yakitori that made my eyes roll back in my head and I couldn't get an intelligible word out because there was so much joy bursting from every pore.
